Bacon is a popular favorite among foodies. While it was considered more of a breakfast food in the past, that view is now changing. While nothing can beat some good old bacon and eggs, some of the innovative new dishes out there are giving it serious competition. One such dish is the BBQ bacon wrapped onion bombs. This dish is exactly what it claims to be, grilled onions filled with meat and seasoning, wrapped with yummy bacon. What’s not to like?
The best part about this dish is that it is super easy to prepare. This is one of those dishes which do not require much planning in advance. Also, it is quite convenient to make this dish for a crowd. If you are expecting a large party and want an easy, homemade appetizer then this dish is the way to go. While it is perfect as an appetizer, you can also serve this dish as part of the main course. Whip up a quick salad and mashed potatoes along with these onion bombs and you are set for dinner. The kids will enjoy this dish as much as the adults. It should not take more than an hour and a half to prepare this dish.
- 2 large white onions
- 2 lbs ground beef

- 1 cup BBQ sauce of your choice, homemade or store-bought
- 1 lb bacon strips
- 2 teaspoons freshly ground black pepper
- 1 teaspoon salt
- Spring onions for garnishing, optional
First, the onions have to be scored. To do this, begin as you normally would while cutting an onion and peel the outer layer. Cut off the stem and start cutting out the inner layers of the onion with a paring knife. Once it is scored, set it aside and prepare the stuffing. Take the ground beef in a bowl and combine with your BBQ sauce, salt, and pepper. Mix well and make sure it is thoroughly combined. Stuff the onions with this mixture.
Carefully wrap each of the stuffed onions with bacon pieces; you could use toothpicks to hold them together if needed. Place the onion bombs on baking sheets and pop them into the oven at 350 degrees Fahrenheit for about half an hour. Once the bacon starts browning, remove from the oven and lightly brush them with the BBQ sauce. Bake for another 45 to 50 minutes and then take your onion bombs out of the oven. Allow them to cool for a few minutes and garnish with the spring onions. Your BBQ bacon wrapped onion bombs are ready to serve.
